Pecan Pilaf

Ingredients
- 1/4 cup butter, divided
- 1/2 cup chopped pecans
- 1/4 cup chopped onion
- 1 cup uncooked long-grain rice
- 2 cups chicken broth
- 1/2 teaspoon salt
- 1/8 teaspoon dried thyme
- 1/8 teaspoon pepper
Recipe
- 1 melt 1-1/2 t butter in a large skillet over medium heat. add pecans; saute' 8.minutes or until lightly browned.
- 2 remove pecans from skillet.
- 3 melt remaining 2-1/2 t butter in skillet over medium heat; add onion, and cook.
- 4 until tender, stirring occasionally. stir in rice and remaining ingredients.
- 5 bring mixture to a boil; cover, reduce heat and simmer 20 minutes until liquid is absorbed and rice is tender.
- 6 remove from heat; stir in pecans.
