Ingredients

- 3 cups water, boiling
- 2 cups cornmeal
- 2 teaspoons salt
- 1/2 cup butter, cut up
- 2 cups milk (not skim)
- 4 large eggs, beaten slightly
- 1 tablespoon baking powder
Recipe
- 1 preheat oven to 375 degrees (fahrenheit) and lightly grease a 13x9 inch baking dish.
- 2 measure cornmeal into a large heatproof bowl.
- 3 gradually pour boiling water over cornmeal and stir until mixture is smooth.
- 4 add salt and butter and stir until butter melts and mixture is well blended.
- 5 let mixture stand 10 minutes.
- 6 after mixture stands, stir in milk and beaten eggs gradually.
- 7 stir in baking powder.
- 8 pour into prepared baking dish and bake at 375 degrees for 45 to 50 minutes until lightly browned.
