Loaded Potato Salad

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 lbs red potatoes, scrubbed and sliced in wedges
  • 1/2 cup sour cream
  • 1/2 cup duke's mayonnaise
  • 3 tablespoons ranch dressing mix
  • 2 tablespoons bacon bits (real bacon not the imitation ones)
  • 1 cup fancy sharp cheddar cheese
  • 1 green onion, nearly finely sliced

Recipe

  • 1 boil potatoes in slightly salted water for about 20 minutes until fork tender in thickest part
  • 2 in a large bowl mix ranch with sour cream and mayo and refrigerate.
  • 3 when potatoes are al dente, remove from heat and drain,.
  • 4 place drained potatoes in bowl with ranch mixture and carefully turn to coat.
  • 5 sprinkle bacon bits, green onion and cheese over the top and gently combine through the entire mixture.
  • 6 serve slightly warm or chill for later.
