Loaded Potato Salad

Ingredients
- Servings: 4
- 1 1/2 lbs red potatoes, scrubbed and sliced in wedges
- 1/2 cup sour cream
- 1/2 cup duke's mayonnaise
- 3 tablespoons ranch dressing mix
- 2 tablespoons bacon bits (real bacon not the imitation ones)
- 1 cup fancy sharp cheddar cheese
- 1 green onion, nearly finely sliced
Recipe
- 1 boil potatoes in slightly salted water for about 20 minutes until fork tender in thickest part
- 2 in a large bowl mix ranch with sour cream and mayo and refrigerate.
- 3 when potatoes are al dente, remove from heat and drain,.
- 4 place drained potatoes in bowl with ranch mixture and carefully turn to coat.
- 5 sprinkle bacon bits, green onion and cheese over the top and gently combine through the entire mixture.
- 6 serve slightly warm or chill for later.
